This rule came before central heating. Red wine evolved in the damp, drafty rooms of stone castles; about 60 degrees. Too warm, it tastes flabby and flavorless. Too cold, and tannins take over. Apparently a lot of restaurants don’t know this. Feel free to ask for an ice bucket.
